Ingredients Quantity
Butter 10g
Celeriac, chopped 80g
Leek, chopped 40g
Garlic purée e.g. GIA 1g
Betaquik 30g
Stock cube, vegetable 1g
Water 120g
Double cream 10g
Salt and pepper to taste

Method

  1. Melt the butter in a saucepan over a medium heat, add the celeriac, leek and garlic purée, cook for 3 to 4 minutes, stirring occasionally.
  2. Add the betaquik®, stock cube, water and cream, stir and simmer on a low heat for 10 minutes.
  3. Using a hand blender, blend to a smooth consistency. Pour the soup into a bowl, season with salt and pepper to preferred taste and serve.

Serving Suggestion

  • Serve with a bread roll (see recipe)
